Ingredients:
- 1 block of extra firm tofu
- 2 tablespoons of tomato paste
- 1 to 2 tablespoons of sriracha (adjust more if you like it hot)
- 2 tablespoons each of chopped fresh mint, basil, and 1/4 cup of chopped cilantro
- 1 very finely minced shallot
- 1 tablespoon of lemongrass paste
- 5 tablespoons of all-purpose flour
- 1 teaspoon of salt
For the Burger Toppings:
- Toasted buns
- Sriracha mayo
- Sliced carrots, cucumbers, and bell peppers
- Additional herbs
Instructions:
- Start by pressing the water out of your tofu. You can use a tofu press or simply place a heavy pan on top of it for about 20-30 minutes.
- Once the tofu is drained, mash it up until it’s crumbly. Add in the tomato paste, sriracha, mint, basil, cilantro, shallot, lemongrass paste, flour, and salt. Mix everything until well combined.
- Shape the mixture into four patties.
- Preheat your oven to 350 degrees Fahrenheit.
- Heat a little olive oil in a skillet and brown the patties on both sides. Once they’re nicely browned, transfer them to the oven and bake for about 20 minutes, or until the patties feel firm on the outside.
