Succulent Salmon Baked to Perfection with a Zesty Lemon Twist

Here’s a fun and easy way to make a delicious dinner of baked salmon with crispy potatoes, broccoli, and a mouth-watering lemon sauce. This is like bringing a fancy bistro right into your kitchen!

What you’ll need:

For the main dish:

  • 1 lb of small gold potatoes, cut into bite-sized pieces
  • Olive oil, garlic powder, salt, and pepper
  • 2-3 cups of broccoli florets (I used baby broccoli in the photos)
  • 1-2 lbs of salmon, cut into 2-4 fillets

For the Lemon Herb Sauce:

  • 6-8 tablespoons of butter
  • 1-2 cloves of garlic, minced
  • 1 shallot, minced
  • 2-3 sprigs of fresh thyme
  • 1/2 cup of heavy cream
  • 1/2 cup of chicken broth
  • Juice of 1 lemon
  • 2 tablespoons of chopped fresh parsley or basil
  • Salt and pepper to taste

Here’s how to make it:

  1. Roast the Potatoes: Preheat your oven to 400 degrees and line a baking sheet with parchment paper. Toss the potatoes with a bit of olive oil, garlic powder, salt, and pepper, then roast them for 25 minutes until they’re lightly browned and tasty.

  2. Make the Amazing Sauce: While the potatoes are roasting, start on your sauce. Melt the butter over medium-low heat (start with 6 tablespoons and add more if needed). Add the garlic, shallot, and thyme sprigs and sauté for 3-5 minutes until they’re soft and fragrant. Add the broth and cream and bring it to a low simmer. Let the sauce simmer on low heat until it thickens enough to coat the back of a spoon. Remove the thyme sprigs, whisk in the lemon juice, stir in the herbs, and season with salt and pepper. Give it a taste – it’s heavenly!

  3. Bake the Salmon and Broccoli: Add the broccoli and salmon to the pan with the potatoes. Toss or brush them with a bit more oil, salt, and pepper. Bake for another 10-15 minutes, until the salmon is fully cooked. You want it to be just past the point of being translucent, where it flakes apart easily but isn’t dried out.

  4. Serve it up: Serve the salmon, potatoes, and broccoli with generous spoonfuls of the sauce, more herbs, and more lemon wedges. Enjoy your gourmet meal!
