These Grilled Chimichurri Portobellos are absolutely amazing. They’re marinated in a bold and zesty chimichurri sauce before being grilled to perfection. Once they’re off the grill, they’re served on a bed of smooth, creamy goat cheese mashed potatoes that perfectly complement the mushrooms’ robust flavor.

For the Cilantro Chimichurri and Mushrooms:
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 cup finely chopped cilantro or parsley
- 1 small red serrano pepper, minced
- 3 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon kosher salt
- Red pepper flakes, to taste
- 4 portobello mushroom caps

For the Mashed Potatoes:
- 2 large russet potatoes
- 4 tablespoons butter
- 4 ounces goat cheese
- 1/2 to 1 cup chicken or vegetable broth
- 1 clove garlic, grated
- 1 teaspoon salt
Instructions:
- Chimichurri: Start by mixing the olive oil, red wine vinegar, cilantro (or parsley), minced serrano pepper, minced garlic, oregano, salt, and red pepper flakes in a small dish. This is your chimichurri sauce.
- Potatoes: Cut the potatoes into quarters and boil them for about 10-15 minutes until they’re very soft. Drain the water, peel off the skins, and mash the potatoes. Mix in the broth, butter, goat cheese, grated garlic, and salt until everything is smooth and creamy.
- Marinade: While the potatoes are cooking, take a moment to brush the mushrooms with some of the chimichurri sauce on both sides. Let them marinate for about 15-30 minutes to soak up all those delicious flavors.
- Grilling the Mushrooms: Heat up a grill pan or an outdoor grill over medium-high heat. Place the marinated mushrooms on the grill and cook them on both sides, brushing on more chimichurri as they cook. Grill them until they’re nicely browned and have those beautiful grill marks.
- Serving: Place a grilled mushroom on top of a generous scoop of the mashed potatoes. Drizzle some more chimichurri sauce over the top and add a final sprinkle of salt, pepper, and red pepper flakes.
