Simple One-Pan Farro Delight Featuring Tomatoes and Kale

This One-Pan Farro with Tomatoes and Kale recipe is the definition of a dreamy, rustic meal! Imagine tender farro mingling with sweet cherry tomatoes, crisp onions, fragrant garlic, and hearty kaleā€”all in one pan. It’s not only delicious but also super nutritious.

Ingredients:

  • 2 cups of water
  • 1 cup of farro
  • Half an onion, thinly sliced
  • 2 cloves of garlic, thinly sliced
  • 10 ounces of grape or cherry tomatoes, halved
  • 1 teaspoon of salt
  • A few stalks of kale, stems removed and chopped into small pieces (about 2 cups)
  • 1/4 cup of olive oil (optional, for extra richness)

Extras for Serving:

  • Red pepper flakes
  • Fresh basil
  • Parmesan cheese
  • Optional: chicken, meatballs, or a fried egg

Instructions:

  1. Start by adding water, farro, onion, garlic, tomatoes, and salt to a medium-sized saucepan. Let it simmer uncovered for 15 minutes.
  2. Next, toss in the kale and continue to simmer for another 15 minutes.
  3. Once done, stir in the olive oil. The farro should be perfectly chewy yet soft, with a delightful bit of broth left in the pan.
  4. Serve it hot, topped with Parmesan, red pepper flakes, and any of the other extras you like.
