Savory Summer Cobb Salad: Chipotle Chicken & Cilantro Vinaigrette

Here’s a fun and easy way to make a delicious summer salad with chipotle chicken. It’s packed with flavors and textures that’ll make your taste buds dance!

First, let’s get the chicken ready. You’ll need to mix together a tablespoon of vegetable oil, two finely chopped chipotle chiles in adobo, a teaspoon each of garlic powder and cumin, and half a teaspoon each of oregano, black pepper, and salt. Toss 3-4 chicken breasts or thighs in this spicy marinade and let them chill in the fridge while you get the rest of the salad ready.

Now, onto the salad. You’ll need 3-4 cups of greens (spring greens or spinach work great), 4 strips of cooked and crumbled bacon, 8-10 quartered strawberries, kernels from 2 ears of corn, and 1-2 sliced ripe avocados.

Once your chicken is well-marinated, it’s time to grill. Heat your grill (or grill pan) to about 400 degrees and grill the chicken for about 5-6 minutes on each side. Let it rest for ten minutes after grilling, then slice it up.

To assemble the salad, spread the greens on a large platter and top with the bacon, strawberries, corn, avocado, and grilled chicken. Season with salt and pepper, toss with a yummy cilantro vinaigrette, and serve!
