**Savor the Speed: Chickpea Bowls with a Spice Kick**

Here’s a fun and easy recipe for Spiced Chickpea Bowls. It’s a perfect blend of healthy eating and comfort food, and it’s vegetarian and vegan-friendly!

Ingredients:

For the Spiced Chickpeas:

  • 1 tablespoon olive oil
  • 1/2 chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon each of chili powder and cumin
  • 1 teaspoon each of turmeric and garam masala
  • 1 teaspoon sea salt
  • A dash of cinnamon and cayenne (to taste)
  • Two 14-ounce cans of chickpeas, drained and rinsed
  • Two 14-ounce cans of fire-roasted diced tomatoes

For the Bowls:

  • Cucumbers
  • Couscous
  • Mint, parsley, cilantro
  • Yogurt or hummus
  • Olive oil
  • Lemon juice
  • Toasted pita wedges

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until soft.
  2. Add the garlic, spices, salt, and chickpeas. Stir until the mixture is fragrant.
  3. Add the tomatoes (with their juice) and let it simmer for 20 minutes. While that’s cooking, you can prepare the other ingredients.
  4. Chop the cucumber, cook the couscous, and mince the herbs.
  5. Arrange bowls with your desired amounts of all ingredients. And there you have it!

Extra Tips:

  • These ingredients also make for delicious burritos. Just wrap them up in a large, warmed flour tortilla and enjoy!
  • You can also prepare a freezer meal version of this recipe. Just freeze the chickpea mixture and when you’re ready to eat, cook it in an Instant Pot on high pressure for 15 minutes, then do a quick release. Serve in bowls with the rest of the ingredients.
