Savor the Season: Sweet Potato Fritters & Jalapeño Ranch Summer Bliss Bowls

Summer Bliss Bowls topped with Sweet Potato Fritters and Jalapeño Ranch are a delight, and you’ll be amazed at how simple these 5-ingredient fritters are to make! Here’s what you need and how to whip them up:

Ingredients for Sweet Potato Fritters:

  • 1 raw sweet potato, peeled and chopped
  • 1 cup of cooked brown rice or quinoa
  • 1/2 cup of almonds or your choice of nuts
  • 1 egg
  • 1 teaspoon of salt
  • 1/2 cup of flour
  • Oil for frying

Ingredients for the Bowls:

  • Heirloom tomatoes
  • Spinach
  • Quinoa or brown rice
  • Roasted corn
  • Fresh dill
  • Goat cheese
  • Jalapeño Ranch dressing

Instructions:

  1. Making the Fritters:

    • Start by pulsing the sweet potato in a food processor until it’s finely minced.
    • Add the cooked brown rice or quinoa and almonds, pulsing again until the mixture is evenly mixed and smooth.
    • Mix in the egg and salt, pulse again until everything is well combined.
    • Transfer the mixture to a bowl, stir in the flour until everything is nicely incorporated.
    • Shape the mixture into balls or patties.
    • Heat some oil in a pan over medium heat and fry each fritter for a few minutes on each side, until they’re golden brown and fully cooked.
  2. Assembling the Bowls:

    • In a bowl, arrange a base of spinach, quinoa or brown rice, and heirloom tomatoes.
    • Add roasted corn, fresh dill, and crumbled goat cheese.
    • Top with the freshly made sweet potato fritters.
    • Drizzle with Jalapeño Ranch dressing or, if you’re in a rush, a simple olive oil and lemon juice dressing works great too.

This dish is not only a feast for the eyes but also packed with flavors that complement each other beautifully. Perfect for a nutritious and satisfying dinner!
