Here’s a simple, everyday version of your Sweet Potato Turkey Chili recipe:
Ingredients:
- 1 tablespoon of oil
- 1 yellow onion, sliced
- 1 1/2 lbs. of ground turkey
- 2 tablespoons each of chili powder and taco seasoning
- 3 sweet potatoes, chopped (peel optional)
- 3 cloves of garlic
- 2 cups of water
- 2 to 3 cups of broth
- 1 can (14-ounce) of black beans
- 1/4 teaspoon of cayenne (add more if you like it spicy!)
Steps:
- Heat the oil in a deep pot over medium-high heat. Add the onion, turkey, a tablespoon each of chili powder and taco seasoning. Stir it around and add water if needed to keep the turkey from drying out. Once the turkey is browned and the onions are soft, take them out of the pot and set them aside.
- In the same pot, add the sweet potatoes and the rest of the spices. Stir them around until the potatoes are slightly browned. Then add the garlic, water, and broth. Let it simmer for about 10 minutes until the sweet potatoes are soft.
- Blend the mixture until it’s as smooth as you like. You can use an immersion blender or a regular one.
- Add the cooked turkey, black beans, and cayenne back into the pot and stir everything together.
Tips:
- The taste will depend on your taco seasoning. You might want to add some salt and pepper at the end.
- For a little extra flavor, try adding a spoonful or two of brown sugar and some red wine vinegar.
- If you want to make it heartier, add about a cup of cooked quinoa.
- Feel free to top it with sour cream, cilantro, cheese, red onions, tortilla chips, avocado, or anything else you like!
- If you think it’s too thick, you can add the third cup of broth.
