Savor the Flavor: A Caesar Twist with Brussels, Kale, and Cheezy Garlic Croutons

Here’s a fun and easy way to make a Brussels & Kale Caesar Salad. This recipe is vegan-friendly and absolutely delicious!

First, let’s make the dressing. You’ll need:

  • 1/2 cup of water
  • 1 avocado
  • 1/4 cup of mayo (you can use regular or vegan)
  • 1 clove of garlic
  • 2 tablespoons of lemon juice
  • 1 teaspoon of dijon mustard
  • 1/2 teaspoon of salt
  • 2 tablespoons of caper brine (this is optional, you can replace it with more lemon juice and salt if you prefer)

Chop the kale finely and shred the brussels sprouts using a mandoline. Then, make your croutons.

When you’re ready to eat, toss the brussels sprouts, kale, dressing, and croutons together and enjoy! Feel free to adjust the amounts of kale, brussels sprouts, dressing, and croutons to your taste and depending on how many people you’re serving.

A couple of things to keep in mind: this recipe makes about 1 1/2 cups of dressing. It’s also great for meal prep – just store everything separately in the fridge. However, once you’ve tossed the salad with the dressing, it won’t keep well, so only mix together what you’re going to eat. If you’re feeling adventurous, garnish your salads with lemon wedges and throw some capers on top.
