This Caprese Grilled Cheese is the ultimate summer sandwich! It’s packed with flavors from a rich basil pesto and a homemade garlic butter tomato sauce, all sandwiched between thick slices of sourdough bread and oozing with fresh mozzarella cheese. Here’s how you can make it:

Ingredients:

  • 4 large slices of sourdough bread
  • 4 thick slices of fresh mozzarella cheese
  • 1/4 cup of pesto (you can use a walnut pesto for extra flavor)
  • 2 tablespoons of salted butter
  • 10 ounces of fresh cherry tomatoes
  • 1 clove of minced garlic
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste

For the Garlic Butter Tomato Sauce:

  1. Start by heating the cherry tomatoes in a dry nonstick skillet until they begin to char slightly.
  2. Reduce the heat and add a tablespoon of butter, stirring well (watch for splattering).
  3. Gently press the tomatoes with the back of a wooden spoon to release their juices.
  4. Add the balsamic vinegar, garlic, and another tablespoon of butter. Let it simmer until it thickens into a delicious sauce. Season with salt and pepper to taste.

To Assemble the Sandwich:

  1. Spread pesto on one slice of bread.
  2. Add a layer of mozzarella cheese and spoon some of the tomato sauce over the top.
  3. Cover with another slice of bread. Spread butter on the outside of both bread slices.
  4. Repeat the process for the second sandwich.

Cooking the Sandwich:

  1. Heat a skillet over medium-high heat and cook the sandwich until the cheese melts beautifully, flipping once or twice to ensure both sides are perfectly browned.
