One-Pan Jambalaya Extravaganza

Here’s a super simple way to whip up a tasty Jambalaya without a pile of dishes to clean afterward. This one-pan wonder combines sausage, peppers, onions, shrimp, and cauliflower rice, all roasted together for a big flavor payoff. It’s a straightforward, delicious dinner option.

Ingredients:

  • 6 ounces of kielbasa sausage, sliced (opt for no-sugar-added if you prefer)
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 tablespoons of olive oil (or avocado oil if you have it)
  • 2 teaspoons of Cajun seasoning, divided
  • 2 tablespoons of tomato paste
  • 20 ounces of frozen cauliflower rice (two 10 oz bags)
  • Sea salt and black pepper to taste
  • 1/2 pound of wild-caught shrimp, peeled, deveined, and tails on
  • 2 tablespoons of melted butter
  • Fresh parsley, chopped, for garnish
  • Lemon juice, to serve

Instructions:

  1. Preheat your oven to 425 degrees.
  2. On a large sheet pan, toss the kielbasa sausage, onion, and bell pepper with olive oil and 1 teaspoon of Cajun seasoning until everything is well-coated.
  3. Roast in the oven for 10 minutes.
  4. Take the pan out and stir in the tomato paste. Add the cauliflower rice and the remaining teaspoon of Cajun seasoning. Mix everything well.
  5. Put the pan back in the oven for another 15-20 minutes, stirring occasionally, until the cauliflower rice is tender and most of the liquid has evaporated.
  6. Season with salt and pepper to taste.
  7. Arrange the shrimp on top of the jambalaya, drizzle with melted butter, and return to the oven for 5-7 minutes, or until the shrimp are pink and cooked through.
  8. Finish with a sprinkle of fresh parsley and a squeeze of lemon juice over the top before serving.
