- 1 tablespoon olive oil
- Optional: a few thin slices of shallot or onion
- 4 zucchini, ends trimmed and spiralized or cut into noodles
- Salt, to taste
Instructions:
- Roast the Peppers: Start by placing the bell peppers on a foil-lined baking sheet. Turn on the broiler and position the sheet on the top level, close to the heat. Broil the peppers until black spots start to form, then turn them to ensure even roasting. Once all sides are blackened, remove from the oven, let them cool, then peel off the skins and remove the seeds and stems.
- Make the Sauce: Combine the roasted peppers, almond milk, olive oil, salt, garlic, and tahini or almond butter in a blender. Blend until the mixture is smooth.
- Cook the Zucchini Noodles: Heat a large skillet over medium-high heat. Add the olive oil and, if using, the onion. Sauté for a minute or two until the onion is soft but not browned. Add the zucchini noodles and toss them in the skillet using non-stick tongs. Cook until they just begin to soften but before they start to release water. Season with salt, then add the sauce and heat everything together just until the sauce is warm.
