Indulgent Avocado Kale Caesar Salad with Crispy Sweet Potato Fries

Here’s a relaxed and conversational version of the Avocado Kale Caesar Salad recipe:

Who’s up for a salad that’s not just good, but good for you? This Avocado Kale Caesar Salad knocks it out of the park! It’s got crunchy kale, creamy avocado, and a tasty sprinkle of seeds. The star of the show is the creamy avocado Caesar dressing, which you can make vegan if you want!

For the Avocado Caesar Dressing, you’ll need:

  • Half an avocado
  • 1/2 cup of water
  • 1/4 cup of mayonnaise (but feel free to skip it, see the notes below)
  • 2 small cloves of garlic
  • 2 tablespoons of lemon juice
  • 1 teaspoon of Dijon mustard
  • 1/2 teaspoon of salt

For the Kale Caesar Salad, you’ll need:

  • A bunch of kale, with the stems removed and chopped (around 5-6 cups)
  • Parmesan and/or pepitas to top it all off.

Here’s how you whip it up:

  1. Cut the avocado in half. Save one half for the salad.
  2. Take the other half and blend it with the water, mayo, garlic, lemon juice, Dijon, and salt. Give it a taste and adjust it to your liking!
  3. Now, toss the chopped kale with the dressing. Toss in some pepitas and Parmesan. Mix it all up.
  4. Top off the salad with the remaining half of the avocado, cut into cubes. Delicious!

A few handy notes for you:

  • If you fancy some Sweet Potato Fries on the side, preheat your oven to 450 degrees with the pan inside. Peel 4 sweet potatoes and cut them into fry shapes. The thinner they are, the crispier they’ll get. Toss them with some olive oil, salt, pepper, and garlic powder. Get your hot pan out of the oven, arrange the fries evenly, and bake for 20 minutes. Give them a turn and bake for another 10 minutes or until they’re crispy.
  • If you want to make this vegan, skip the Parmesan and use vegan mayo instead.
  • As for the mayo, it adds creaminess and flavor to the dressing. If you’re not a fan, you could use Greek yogurt (which will make it tangier), or just leave it out for a more watery but still tasty dressing.
  • Traditional Caesar salad is made with anchovies, but this recipe doesn’t include them because the dressing tastes great without them. Plus, who keeps anchovies on hand anyway?
  • If you end up with extra dressing, it tastes great on Avocado Caesar Green Beans. Yum!
