Here’s a super simple recipe for big, soft M&M cookies that are perfect for lifting your spirits any day of the week. These are some of my go-to cookies because they’re just so yummy and easy to make.
Ingredients:
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 1 cup shortening
- 2 eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups flour (plus an extra 2-3 tablespoons if needed)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups M&M’s
Instructions:
- Start by preheating your oven to 350 degrees.
- Grab a large bowl and combine the brown sugar, white sugar, shortening, eggs, and vanilla. Mix these with an electric mixer on low until everything is nicely blended.
- Next, add in the 2 1/2 cups of flour, baking soda, and salt. Mix these until just combined—it might be easier to mix with your hands towards the end.
- If the dough feels too sticky, sprinkle in those extra tablespoons of flour until it’s thick and feels a bit dry.
- Now for the fun part: fold in the M&M’s.
- Shape the dough into large balls and press some more M&M’s on the top for that extra candy crunch. Flatten them slightly with your hand or the back of a spoon.
- Bake the cookies for about 8-10 minutes. They should still be a bit soft in the middle.
- Once done, quickly remove them from the cookie sheet and let them cool on a rack. Give them about 5-10 minutes to firm up a bit.
Pro Tip: I like to add a bit more flour to keep the cookies from flattening out too much. If you accidentally add too much and the cookies won’t flatten during baking, just press them down a bit before they go in the oven.
There you have it—delicious, soft M&M cookies that are sure to be a hit!
