Here’s a fun and easy recipe for making delicious apple muffins. They’re healthy, not too sweet, and taste amazing with a bit of butter and honey.
Ingredients:
- 2 cups of rolled oats
- 8 medjool dates, pitted (about 3/4 cup)
- 1/2 cup of olive oil
- 1/4 cup of real maple syrup
- 1 to 2 grated apples (about 1 to 2 cups total)
- 2 eggs
- 1 teaspoon of baking soda
- A pinch of sea salt and/or cinnamon (optional)
- Coconut, seeds, nuts, or butterscotch chips (optional, for topping)
Instructions:
- Preheat your oven to 350 degrees.
- Blend all the ingredients together until you get a chunky batter.
- Pour the batter into a greased or lined muffin tin. If you like, sprinkle some butterscotch chips on top.
- Bake for 15-18 minutes, or until the tops spring back when you press them.
- If you’re feeling fancy, sprinkle some sea salt on the warm muffins. You can enjoy these muffins warm or cold, anytime you like!
Tips:
- If you prefer a sweeter muffin, feel free to add a bit more maple syrup.
- The baking times and textures might vary because every apple is different. For instance, I use Honeycrisp apples which are very sweet and juicy, and I don’t drain out the liquid before adding them to the batter. So, each batch might be a bit unique. Just keep an eye on your bake time and add minutes if needed to get them baked to perfection!
- The longer you blend the ingredients, the smoother and puffier your muffins will be. If you blend less, you’ll get a more textured, dense muffin. Both ways are delicious, so it’s up to you!
