Ignite Your Taste Buds with Fiery Sofritas Tofu

Here’s a fun and easy way to make Spicy Sofritas Tofu, just like you’d get at Chipotle! This recipe is all about spicy peppers, garlic, tomatoes, and fresh cilantro, all simmered together to create a delicious sauce for your tofu.

First, let’s gather our ingredients. You’ll need:

  • 1 poblano pepper
  • 1 to 3 chipotle peppers canned in adobo sauce (use 1 for a mild/medium heat, or 3 if you like it really spicy)
  • 2 tablespoons of the adobo sauce from the can
  • 2 to 3 cloves of garlic
  • 2 teaspoons of cumin
  • 1 teaspoon of chili powder or smoked paprika
  • 1/2 cup of your favorite salsa
  • 2 tablespoons of canola oil
  • 1/2 teaspoon of salt
  • 1 package (14 ounces) of extra firm tofu

Now, let’s get cooking!

  1. Start by roasting your poblano pepper. If you have a gas range, you can hold the pepper over the flame until it’s hot and blistered. If not, no worries! Just turn your oven to the broil setting, coat the poblano with oil, place it on a baking sheet, and roast for about 15 minutes until it’s soft and blistered.

  2. Next, we’re going to make a sofritas sauce. Put the roasted poblano, chipotles, garlic, spices, and salsa into a small blender or food processor. Pulse everything until you have a mostly smooth paste.

  3. Now it’s time for the tofu. Slice it up and press it with a clean towel to get rid of as much excess moisture as you can. The drier the tofu, the better it will soak up the sauce. Heat a drizzle of oil in a pan over medium-high heat. Scramble the tofu into small bits with a spatula or wooden spoon.

  4. Add the sofritas sauce to the pan with 1/2 cup of water. Let everything simmer for 15-20 minutes until the sauce is richly colored and has thickened slightly. You can add more water if needed, and season to taste with the salt and lime juice.

And that’s it! Serve your spicy sofritas tofu in tacos, burritos, or over a big bowl of rice. Enjoy!
