Experience the Zest of Cauliflower Orange Gnocchi

Here’s a simple and delicious way to make Cauliflower Orange Gnocchi at home, inspired by the popular dish from Bar La Grassa. This recipe features soft gnocchi and thinly sliced cauliflower in a glossy, flavorful sauce. It’s absolutely delicious!

Ingredients:

  • 1 package of gnocchi (DeLallo brand recommended)
  • 2-3 tablespoons of unsalted butter
  • 1 medium-large head of cauliflower, cored and thinly sliced into bite-sized pieces (about 3 cups)
  • 2 shallots, minced (about 1/3 cup)
  • 1/4 to 1/2 cup of heavy cream (adjust according to your preference)
  • 1/2 to 1 teaspoon of red pepper flakes
  • 1 1/2 teaspoons of salt (adjust to taste)
  • Juice and zest of 1 orange (about 2 tablespoons of juice, zest to taste)
  • Chives, chopped, for topping

Instructions:

  1. Cook the gnocchi according to the instructions on the package. Once done, set it aside.
  2. In a large nonstick skillet, heat the butter over high heat (but be mindful of the skillet’s heat tolerance). Add the sliced cauliflower and minced shallots. Let them cook without stirring for a few minutes to allow them to brown, then stir and repeat until the cauliflower and gnocchi are nicely browned and the shallots are soft.
  3. Pour in the heavy cream, orange juice, red pepper flakes, and salt. Let everything simmer for a minute or two until it reaches your desired consistency. The sauce should lightly coat all the ingredients.
  4. Serve the gnocchi hot, garnished with fresh chives and a sprinkle of orange zest.

Notes:

  • Be cautious with the heat setting if using a nonstick pan to avoid damage or potential toxins from high heat. Adjust the heat according to what you’re comfortable with and what’s recommended for your cookware.
  • Using 1/4 cup of heavy cream will create a light coating on the gnocchi, while 1/2 cup will make it richer and more sauce-like. Choose based on your preference!
