Duo Delight Banana Cream Pies

Here’s a simple way to whip up some delightful Banana Cream Pies for two! These no-fuss pies are served in jars, making them a perfect treat that’s both easy to make and fun to eat.

Ingredients:

  • For the Graham Cracker Crust:

    • 4 graham crackers, crushed
    • 2 tablespoons sugar
    • 2 tablespoons melted butter
  • For the Banana Cream Pie Filling:

    • 1 1/2 bananas (1 for the filling, 1/2 for layering)
    • 2 tablespoons sugar
    • 2 tablespoons cornstarch
    • A pinch of salt
    • 1 egg yolk
    • 1/2 cup plus 2 tablespoons whole milk
    • 1 tablespoon butter
    • A tiny splash of vanilla

Instructions:

  1. Prepare the Crust:

    • Preheat your oven to 350 degrees.
    • Mix the crushed graham crackers with sugar and melted butter.
    • Press the mixture into two 8-ounce ramekins.
    • Place these on a baking sheet along with an unpeeled banana and bake for 10 minutes. The banana should soften and the crust should set.
  2. Make the Filling:

    • In a small saucepan, off the heat, whisk together sugar, cornstarch, salt, and egg yolk.
    • Gradually whisk in the milk until the mixture is mostly smooth.
    • Place the saucepan over low heat and bring the mixture to a low simmer, stirring frequently. It’s okay if it gets a bit lumpy.
    • Continue heating until the mixture thickens into a nice pudding consistency.
    • Remove from heat and stir in the butter and vanilla.
  3. Blend the Filling:

    • Once the pudding and the roasted banana have cooled, blend them together until mostly smooth. This makes the filling creamy and spreads easily.
  4. Assemble the Pies:

    • Layer the bottom of each crust with banana slices.
    • Pour the creamy filling over the banana slices.
    • Refrigerate the pies for 2-3 hours to set.
  5. Serve:

    • Top each pie with whipped cream before serving for that extra touch of indulgence.
