This Curry Chicken Salad is not only incredibly tasty but also super healthy. It’s packed with flavorful spiced chicken, sweet golden raisins, crunchy pistachios, fresh herbs, and a mix of Greek yogurt and olive oil instead of mayo, making it a guilt-free delight.
Ingredients:
- 1 lb. chicken breasts
- 2 teaspoons curry powder, plus more to taste
- 1 teaspoon each of garlic powder and onion powder
- 3/4 cup Greek yogurt
- 2 tablespoons either olive oil or water
- 2 tablespoons honey
- 1/4 cup golden raisins
- 1/4 cup pistachios
- 1/4 cup chopped cilantro and/or parsley
- Salt and pepper, to taste
Instructions:
- Prepare the chicken: Start by slicing the chicken breasts horizontally to make them thinner. Season them with curry powder, garlic powder, onion powder, salt, and pepper. Heat a drizzle of olive oil in a nonstick skillet over medium-high heat and sauté the chicken until it’s golden brown and fully cooked. Let it cool, then chop it into small pieces and put it in the fridge to chill.
- Make the salad: In a medium bowl, combine the chilled chicken with Greek yogurt, olive oil or water, honey, golden raisins, pistachios, and herbs. Add more curry powder, garlic powder, onion powder, salt, and pepper according to your taste.
- Serve it up: This versatile salad can be enjoyed over greens, stuffed into a croissant, spread on toast, rolled in a wrap, or my favorite way—on an everything bagel.
