Decadently Rich Coconut Oil Brownies

Here’s a super simple recipe for extra fudgy brownies using coconut oil. You only need five ingredients to make these deliciously thick and fudgy treats. Perfect for when you want to whip up something quick and satisfying!

Ingredients:

  • 3/4 cup coconut oil (solid measure)
  • 4.5 ounces unsweetened chocolate
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon salt
  • 3/4 cup all-purpose flour

Instructions:

  1. Start by preheating your oven to 350 degrees.
  2. Gently melt the coconut oil and chocolate together over very low heat.
  3. Once melted, whisk this mixture in a bowl with the brown sugar.
  4. Add the eggs and whisk for about 30 seconds, until the mixture thickens.
  5. Stir in the flour and salt just until combined. The batter will be quite oily and heavy.
  6. Pour the batter into a 9-inch square baking dish and bake for 25-28 minutes. You might see some oil on the surface or around the edges, but don’t worry—it gets absorbed back into the brownies as they cool.
  7. For the fudgiest texture, bake less rather than more. Allow the brownies to cool for a few hours or overnight if you can wait that long for cleaner cuts. But honestly, they’re irresistible when warm!

These brownies are a delightful cross between traditional brownies and chunks of fudge, dense, rich, and utterly satisfying!
