Decadent Peanut Butter and Chocolate Chip Cheesecake Bars

These peanut butter chocolate chip cookie cheesecake bars are a dream come true for anyone who loves a decadent dessert. They’re incredibly delicious and perfect for those who can’t get enough of a good sweet treat.

Here’s what you’ll need to make them:

  • 1 stick of unsalted butter (1/2 cup), softened
  • 1/2 cup white sugar
  • 1/3 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (you can use less if you’re not a fan of the salty-sweet combo)
  • 1/2 cup rolled oats
  • 2 cups chocolate chips
  • 8 ounces cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract

To make these bars, start by preheating your oven to 325 degrees. Begin with the cookie dough. Cream together the butter, both sugars, and peanut butter until the mixture is smooth and fluffy. Add the egg and mix until it’s fully incorporated. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this to the butter mixture, mixing well after each addition. Fold in the oats and chocolate chips.

Next, prepare the cheesecake filling by creaming together the cream cheese, sugar, egg, and vanilla until smooth.

To assemble, press about half to two-thirds of the cookie dough into the bottom of a 9-inch square baking dish. Pour the cheesecake filling over the cookie dough layer. Then, take the remaining cookie dough, crumble it, and sprinkle over the top, or roll it flat and lay it over the cheesecake layer.

Cover the dish with foil and bake for 20 minutes. Then remove the foil and continue to bake for another 15-20 minutes, or until the top is lightly browned and the cheesecake layer is set.

These bars can be served warm or cold and should be stored in the refrigerator if there are any leftovers. If you prefer a less thick bar, you can also use a 9×13 pan. Enjoy your baking and the delicious results!
