Ingredients:

  • Lentils
  • Potatoes
  • Green Beans
  • Tomatoes
  • A mix of herbs such as dill, parsley, and basil
  • Eggs
  • Goat Cheese

For the Garlic Olive Oil Dressing:

  • 3/4 cup olive oil
  • 2 tablespoons white vinegar
  • 2 tablespoons water
  • 1 tablespoon coarse sea salt (or 2 teaspoons table salt)
  • A pinch of black pepper
  • 1 teaspoon each of dry oregano and dry basil
  • 1 to 2 teaspoons sugar
  • 1 large clove of garlic

Instructions:

  1. Prep the Vegetables: Start by cooking your lentils and roasting your potatoes. You can either blanch or steam the green beans.
  2. Make the Dressing: Combine all the dressing ingredients in a blender and blend until smooth.
  3. Cook the Eggs: In a small nonstick skillet over low heat, melt a tiny knob of butter. Whisk the eggs well in a separate bowl, season with salt and pepper, and pour into the skillet. Let them sit for a minute before gently scraping the edges with a soft rubber spatula. Continue moving the eggs around slowly, allowing them to form big fluffy curds. When the eggs are nearly done, add chunks of goat cheese and a pinch of herbs. Remove the skillet from heat to let the cheese melt and the eggs finish cooking.
  4. Assemble the Bowls: It’s best to arrange everything in your bowls before cooking the eggs so you can add them while they’re hot. Season with salt, pepper, lemon juice, and your homemade dressing.
