Savor the Flavors of Texas with this Slow-Cooker Chili Extravaganza

Here’s a laid-back, everyday language version of your Texas-style shredded beef chili recipe:

What You’ll Need:

For the Chili:

  • 1-2 tablespoons of avocado or vegetable oil
  • 2 1/2 to 3 pounds of beef chuck roast (fat trimmed and cut into 3-inch cubes)
  • 2 1/2 teaspoons of salt (1 teaspoon per pound of meat, add more if you like)
  • 1 yellow onion (finely diced)
  • 5 cloves of garlic (minced)
  • 1 tablespoon of brown sugar
  • 1 tablespoon of cumin
  • 1/4 cup of chili powder
  • Two 4.5-ounce cans of green chiles
  • One 14-ounce can of crushed fire roasted tomatoes

For the Toppings:

  • Green onions
  • Sour cream
  • Cheddar cheese
  • Chips or cornbread

How to Make It:

  1. Get everything ready: Chop and measure all your ingredients.

  2. Brown the beef: Heat the oil in a large Dutch oven over high heat. Toss the beef chunks with salt and let them cook undisturbed for a few minutes on each side until they’re nicely browned. You might need to do this in batches depending on the size of your pan. Once done, transfer the beef chunks to the slow cooker.

  3. Saute onions and garlic: Add onions and garlic to the pan (add a bit more oil if needed) and sauté until they’re golden and softened. This should lift a lot of yummy browned bits from the bottom of the pan.

  4. Add spices: Throw in the brown sugar and spices and sauté for 3-5 minutes until it smells amazing.

  5. Add tomatoes and chiles: Add the green chiles and crushed tomatoes and let it simmer for 3-5 minutes until it’s bubbly and delicious.

  6. Cook low and slow: Pour the tomato mixture into the slow cooker over the beef chunks and gently mix them around so they’re surrounded in the sauce. Cook on high for about 4 hours or low for 8 hours.

  7. Serve: Shred the beef into big tender chunks (you should be able to do this directly in the slow cooker) and season with more salt to taste. Serve with sour cream, cheddar, green onions, and cornbread.

A Note on Chili Powder: Every chili powder tastes a little different as they all use their own unique blend of spices. I like the Simply Organic chili powder, but honestly, this recipe works well with any chili powder that smells good and tastes good to you.
