Savor the Spices with These Red Curry Lentils

Here’s a laid-back version of your favorite red curry lentils recipe. It’s super easy to make, incredibly tasty, and healthy to boot!

Ingredients:

  • 1 1/2 cups of lentils (make sure to rinse and pick them over)
  • 1/2 of a large onion, diced
  • 2 tablespoons of butter
  • 2 tablespoons of red curry paste
  • 1/2 tablespoon of garam masala
  • 1 teaspoon of curry powder
  • 1/2 teaspoon of turmeric
  • 1 teaspoon of sugar
  • 1 teaspoon each of minced garlic and ginger
  • A few shakes of cayenne pepper to taste
  • One 14-ounce can of tomato puree
  • 1/4 cup of coconut milk or cream
  • Cilantro for garnish
  • Rice for serving

Instructions:

  1. Start by cooking the lentils as per the instructions on the packet. Once done, drain them and set aside.
  2. In a large saucepan, melt the butter over medium-high heat. Toss in the diced onion and sauté until it turns golden and gives off a nice aroma.
  3. Now, it’s time to spice things up! Add the curry paste, garam masala, curry powder, turmeric, cayenne pepper, sugar, garlic, and ginger. Stir fry this spicy mix for a minute or two.
  4. Pour in the tomato puree and stir well. Let it simmer until it becomes smooth.
  5. Add the cooked lentils and the coconut cream to the saucepan. Give it a good stir to combine everything. Let it simmer for another 15-20 minutes. The longer it simmers, the more the flavors will meld together.
  6. Serve your delicious red curry lentils over rice and garnish with cilantro. Enjoy!
