Here’s a fun and easy recipe for salmon tacos with a mango, corn, and cucumber salsa.
What you’ll need:
For the tacos, grab a pound of salmon fillet, some taco seasoning, and avocado oil. For the salsa, you’ll need a large mango, a cucumber, two ears of sweet corn, a red onion, some cilantro, honey, a lime, and salt. You’ll also need either a can of refried beans, black beans, or two avocados, along with eight corn tortillas and some more avocado oil for softening.
Let’s get cooking:
- Start by preheating your oven to 425 degrees and lining a baking sheet with parchment paper.
- Season your salmon with the taco seasoning and avocado oil. If your seasoning doesn’t have salt, add some.
- Bake the salmon for about 8 minutes, or until it easily falls apart when you press it with a fork.
- While the salmon is baking, chop up your salsa ingredients and mix them together in a bowl. Season to taste.
- To soften the tortillas, heat up some oil in a large skillet and quickly dip one side of the tortilla into the hot oil. Transfer to a paper-towel lined plate and stack them up so the heat and oil distribute evenly. Alternatively, you can wrap the tortillas in damp paper towels and microwave them for 30 seconds.
