Zesty Peanut Tofu Delight Bowls

Looking for a quick and tasty dinner option? Try these Spicy Peanut Tofu Bowls! They’re perfect for meal prep or a busy weeknight. You’ll enjoy crispy tofu paired with roasted veggies and fluffy rice, all topped with a deliciously spicy and sweet peanut sauce.

Ingredients:

  • 2 blocks of extra firm tofu
  • 1-2 tablespoons of cornstarch
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 2 small heads of broccoli (or 1 large), cut into florets
  • 2 red bell peppers, sliced
  • 1 1/2 cups of uncooked white rice

For the Peanut Sauce:

  • 1/2 cup of peanut butter
  • 1/3 cup of low-sodium soy sauce
  • 2 tablespoons of toasted sesame oil
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of sambal oelek or chili paste (adjust according to how spicy you like it)
  • 2 tablespoons of sugar, honey, or agave
  • 1-inch piece of fresh ginger, peeled
  • 1 clove of garlic, peeled
  • 1/4 cup of water

Instructions:

  1. Start by pressing the tofu to remove excess liquid. Cut the tofu into cubes and gently toss them with cornstarch until they’re evenly coated. Place them on a parchment-lined baking sheet.
  2. On another baking sheet, spread out the broccoli florets and sliced bell peppers. Drizzle them with olive oil and sprinkle with salt.
  3. Roast the tofu and vegetables in an oven preheated to 425 degrees for 20-30 minutes. You want the tofu to be slightly crispy and the broccoli to be tender and roasted.
  4. While the veggies and tofu are roasting, cook the rice according to package instructions.
  5. For the peanut sauce, blend all the sauce ingredients together until smooth.
  6. Serve the crispy tofu and roasted veggies over the cooked rice. Drizzle generously with the spicy peanut sauce and enjoy!

  • For extra chewy and dry tofu, freeze it first and then thaw it in the fridge the day before. Press out the water as usual. This method helps remove more moisture, giving the tofu a chewier texture.
