Craft Your Own Cauliflower Gnocchi at Home

Here’s a simple way to make homemade cauliflower gnocchi that’s both delicious and a bit healthier. You only need three ingredients, and it’s perfect with any sauce you fancy!

Ingredients:

  • 1 16-ounce bag of frozen cauliflower florets (about 5 cups if you’re using fresh)
  • 2/3 cup of flour
  • 1 teaspoon of salt

Instructions:

  1. Start by boiling a pot of water. Once it’s boiling, add the cauliflower and let it cook for about 5-8 minutes until it’s tender. Drain the water.
  2. Spread the cooked cauliflower on a clean towel to cool for about 5-10 minutes. Then, give it a good squeeze to remove as much water as possible—the drier, the better.
  3. Next, put the cauliflower in a food processor and pulse it until it breaks down into small crumbles. Add the flour and salt, and pulse again until you have a soft, sticky dough.
  4. Flour your work surface and turn out the dough. Divide it into four equal parts, rolling each into a long rope. Cut these ropes into small gnocchi-sized pieces.
  5. Heat up a large nonstick skillet over medium heat and add a bit of oil. Cook the gnocchi in batches until they’re nicely browned, adding a little water towards the end to help them steam and cook through.
  6. Finally, toss the gnocchi in your favorite sauce right in the pan, mixing well to coat each piece.
