Romantic Mushroom Fettuccine for Date Night

Date Night Mushroom Fettuccine is a simple yet luxurious dish that only needs five ingredients to make! Here’s how you can whip it up:

Ingredients:

  • 1/2 cup of butter, divided
  • 2 cloves of fresh minced garlic, or a pinch of garlic salt if that’s what you have
  • 16 ounces of fresh sliced mushrooms—add more if you’re a mushroom lover!
  • 1 cup of heavy whipping cream
  • 1 pound of fettuccine
  • 1/2 cup of Parmesan cheese
  • 1 cup of the water you cooked the pasta in
  • 1 teaspoon of salt, adjust to taste
  • Freshly ground black pepper
  • Parsley for garnish

Instructions:

  1. Start by cleaning your mushrooms thoroughly.
  2. In a large skillet, melt 2 tablespoons of butter and add the garlic and mushrooms. Sauté them until the mushrooms are soft and have a nice, deep brown color. This should take about 10-15 minutes.
  3. Pour in the cream and add the remaining butter. Let this simmer gently on low heat.
  4. Meanwhile, cook the fettuccine in a large pot following the package instructions. Remember to save a cup of the pasta water before you drain it.
  5. Toss the hot fettuccine back into the pan and pour the creamy mushroom sauce over it. Use tongs to mix everything together nicely.
  6. Stir in the Parmesan cheese and add the reserved pasta water bit by bit until you achieve the desired consistency.
  7. Season with salt and pepper to taste.
  8. Serve right from the stove and enjoy it piping hot. Don’t forget to top it with some parsley for that extra touch of flavor.

Pro Tips:

  • If you forget to save some pasta water, just use regular water.
  • The longer the fettuccine sits, the more water it may need to stay creamy.
  • For an extra gourmet touch, drizzle a bit of truffle oil over the finished dish.

This dish is perfect for a cozy, romantic dinner at home. Enjoy your cooking and the delicious meal!
