Savor the Delight of Sweet Potato Tortilla Soup in an Instant Pot

Here’s a fun and easy way to make Sweet Potato Tortilla Soup using your Instant Pot.

First, gather your ingredients. You’ll need half an onion, chopped, three cloves of garlic, minced, one jalapeño, seeded and minced, two large sweet potatoes, peeled and diced, one 28-ounce can of fire roasted crushed tomatoes, six cups of vegetable broth, one tablespoon of chili powder, two chipotle peppers in adobo (canned), minced, or a dash of chipotle powder, and one to two cups of sweet corn (optional).

For the tortilla strips and toppings, you’ll need 12 corn tortillas, oil for frying, avocado, cotija or queso fresco, and cilantro, red onion, lime wedges, etc.

Now, let’s get cooking!

For the soup, put all the ingredients in the Instant Pot and cook on high pressure for three minutes. Then, quickly release the steam.

While the soup is cooking, cut the tortillas into small strips. Heat the oil in a heavy pan over medium high heat. Add the tortilla strips in batches and fry them in the hot oil until they’re golden and crispy. Remove them with tongs, drain on paper towels, and sprinkle with salt.

When you’re ready to serve, stir about half of your tortilla strips into the soup and save the rest for topping. Load up your bowls with all the toppings you like. I highly recommend avocado, and don’t forget the lime!

A couple of things to note:

  • The Instant Pot will take about 10-15 minutes to come to pressure before the cook time starts.
  • You can add chicken to this recipe. Just add 1 lb of chicken breasts with everything else and increase the time to 8 minutes. Shred the chicken once the steam is released.
  • If you prefer to cook on the stovetop, sauté your onion, garlic, and jalapeño in a little oil. Add sweet potatoes and spices. Add tomatoes, broth, and corn. Simmer for 15-20 minutes.
  • Some of the oil from the fried tortilla strips will end up in the soup, giving it a slightly luxurious texture. I prefer to fry my tortilla strips in olive oil so that olive oil is what ends up in my soup. But if you want something that has a neutral flavor, use vegetable oil.
