Ingredients:
- 6 ounces of kielbasa sausage, sliced (opt for no-sugar-added if you prefer)
- 1 onion, sliced
- 1 red bell pepper, sliced
- 2 tablespoons of olive oil (or avocado oil if you have it)
- 2 teaspoons of Cajun seasoning, divided
- 2 tablespoons of tomato paste
- 20 ounces of frozen cauliflower rice (two 10 oz bags)
