Here’s a quick and healthy recipe for Cauliflower Fried Rice that you can whip up in just 15 minutes! This dish uses fresh cauliflower instead of rice, making it a lighter option. You’ll need a medium-sized cauliflower head, some sesame oil, a large carrot, garlic, frozen edamame, and eggs or tofu if you’re keeping it vegan. For seasoning, just some low sodium soy sauce or tamari if you’re gluten-free.

First, get your cauliflower ready by shredding it into rice-sized pieces using a grater or a food processor. Then, heat a tablespoon of sesame oil in a large skillet and toss in the carrots and garlic, cooking them until they’re fragrant, which should take about 5 minutes. Next, add the cauliflower and edamame along with the rest of the sesame oil and stir fry everything. You want the cauliflower to be cooked but still have a bit of a bite.

Now, lower the heat and make a space in the center of your skillet to add the eggs or scrambled tofu. Stir gently but continuously until the eggs or tofu are fully cooked.
