Dynamite Sushi Bowls! Imagine your favorite dynamite roll transformed into something even simpler and healthier. This dish features tofu, avocado, cucumber, ginger, and brown rice, all topped with a zesty spicy mayo. It’s vegetarian and can easily be adapted for vegans.

Ingredients:

  • Tofu:

    • 12 ounces extra firm tofu
    • 1/2 cup soy sauce
    • 1/4 cup rice vinegar
    • 2 tablespoons agave
    • 1 clove garlic, minced
  • Bowls:

    • Rice (white or brown)
    • Carrots
    • Cucumbers
    • Avocado
    • Sesame seeds
    • Greens (such as microgreens)
    • Pickled ginger
    • Soy sauce and wasabi for topping
    • Sriracha and mayo for the spicy mayo drizzle

Instructions:

  1. Prepare the Tofu:

    • Press the tofu to remove excess moisture. Cut it into small cubes.
    • Marinate the tofu cubes in soy sauce, rice vinegar, agave, and minced garlic while you prepare the vegetables and other ingredients.
  2. Prepare the Bowls:

    • Get your veggies, rice, and toppings ready.
  3. Cook the Tofu:

    • Heat a bit of oil in a skillet over medium heat.
    • Drain the excess marinade from the tofu. Add the tofu to the skillet and cook, stirring occasionally to prevent it from over-browning.
    • Once the tofu is nicely browned, it’s ready to be added to your bowls.
  4. Assemble the Bowls:

    • Divide the cooked rice among the bowls.
    • Add the browned tofu and your choice of veggies.
    • Top each bowl with a sprinkle of sesame seeds, a dollop of spicy mayo, and some pickled ginger.

Notes:

  • For a vegan version, replace the mayo with a vegan-approved substitute like store-bought vegan mayo or a homemade version made from tofu.
