Revitalizing Couscous Salad Drizzled with a Tangy Lime Basil Vinaigrette

Here’s a fun and easy recipe for a vibrant couscous salad that’s full of flavor and healthy ingredients. It’s got sweet potatoes, black beans, spinach, feta, and more, all mixed with a tangy lime basil vinaigrette that’s a game-changer!

Ingredients for the Salad:

  • 3/4 cup of couscous
  • 1 cup of water
  • 2 sweet potatoes, peeled and diced (about 3 cups)
  • One 14-ounce can of black beans, drained and rinsed
  • 2 cups of baby spinach, cut into small pieces
  • 4 ounces of crumbled feta cheese
  • Half a red onion, thinly sliced
  • 1/2 cup of chopped pistachios (optional)
  • Black pepper to taste

Ingredients for the Lime Basil Vinaigrette:

  • 1 bunch of fresh basil (1/2 cup packed)
  • 1/2 cup of olive oil
  • Juice of 1 – 2 limes (to taste)
  • 1 clove of garlic
  • 1/2 teaspoon of kosher salt
  • 1/2 teaspoon of red pepper flakes
  • 1/4 to 1/2 cup of water, if needed

Instructions:

  1. Blend all the dressing ingredients in a food processor until they’re somewhat smooth.
  2. Cook the couscous in 1 cup of water, following the package directions. Fluff it with a fork and let it cool.
  3. Simmer the sweet potatoes in a skillet with about 1/2 cup of water and a sprinkle of salt. Cover it until the potatoes are fork-tender. Drain them and set them aside to cool.
  4. Toss all the ingredients together with the dressing, season it with salt and pepper, and serve! You can also store each ingredient separately for salads throughout the week.
