Unleash Flavors with Just 5 Ingredients: The Green Curry Revolution

Here’s a simple and delicious 5-Ingredient Green Curry recipe that’s perfect for a quick dinner. It’s loaded with vegetables and has a rich, creamy sauce, enhanced with a touch of sweetness from golden raisins and the fresh flavor of cilantro.

Ingredients:

  • 12 ounces of firm tofu
  • A dash of olive oil and a sprinkle of salt
  • 2 sweet potatoes, peeled and cubed
  • 4 tablespoons of green curry paste (Thai Kitchen brand recommended for a milder taste)
  • Three 14-ounce cans of coconut milk
  • About 3 cups of broccoli florets

Optional Extras:

  • A handful of chopped fresh cilantro
  • A handful of golden raisins
  • A little fish sauce and brown sugar to taste

Instructions:

  1. Prepare the Tofu: Start by pressing the tofu with paper towels to remove excess water. Cut it into cubes. Heat some olive oil in a large pot over medium-high heat. Add the tofu, sprinkle with salt, and pan-fry until golden brown, about 10-15 minutes. Remove the tofu and set it aside.
  2. Cook the Veggies: In the same pot, combine the sweet potatoes, coconut milk, and curry paste. Let it simmer for about 5-10 minutes until the potatoes are tender. Then, add the broccoli and the previously cooked tofu. Continue to simmer for another 3-5 minutes until the broccoli turns bright green.
  3. Add the Finishing Touches: For a unique twist, throw in a handful of golden raisins and some chopped cilantro. I recommend adding a splash of fish sauce and a sprinkle of brown sugar to really enhance the flavors.

Serving Suggestion:
Serve the curry over steaming white rice for a complete meal.

Note:
If you’re using a different brand of curry paste like Mae Ploy or Maesri, which are spicier, start with less paste and adjust according to your taste preference.
