Savor the Spice: A Quick Guide to Instant Pot Red Curry Lentils

Here’s a fun and easy way to make a delicious dinner tonight: creamy, spicy red curry lentils, and the best part is, you can whip it up in your Instant Pot!

First, gather your ingredients. You’ll need:

  • 1 1/2 cups of brown lentils
  • Half a large onion, diced
  • 2 tablespoons of red curry paste
  • 1 tablespoon of sugar (optional)
  • 1 teaspoon each of garam masala and curry powder
  • Half a teaspoon of turmeric
  • 2 cloves of garlic, minced
  • A 1-inch piece of ginger, minced
  • A few shakes of cayenne pepper
  • 2 cups of water
  • A 14-ounce can of tomato sauce
  • 1 teaspoon of coarse salt (add more if you like)

For the finishing touches, you’ll need:

  • 3/4 cup of coconut milk
  • 2 tablespoons of butter or ghee (optional)
  • Some cilantro for garnish
  • Rice for serving

Now, let’s get cooking!

  1. Put all the ingredients (except the coconut milk, butter, cilantro, and rice) into your Instant Pot.
  2. Cook on high pressure for 15 minutes.
  3. Let the pressure release naturally for another 10 minutes.
  4. Stir in the coconut milk and butter, then taste and adjust the seasonings to your liking.
  5. Serve it up with some rice, sprinkle some cilantro on top, and enjoy!

This recipe is super flexible. Feel free to add any extra veggies or fruits you have in your fridge. Roasted bell peppers, slices of mango, chunks of avocado – they all work great!

You can also make this recipe in a crockpot or on the stovetop, and it freezes really well too. If you want to freeze it, you can do so either cooked or uncooked. If you choose to freeze it uncooked, just add the water and tomato sauce when you’re ready to cook it.
