Sizzling Walnut Chorizo Tacos Topped with Zesty Pineapple Salsa

Imagine whipping up some Walnut Chorizo Tacos with a zesty Pineapple Salsa! This dish features a spicy mix of walnut and cauliflower that mimics chorizo, paired with creamy fresh guacamole, a tangy slaw, and a vibrant, homemade pineapple salsa. It’s my go-to taco recipe, and it might just become yours too!

Ingredients:

  • For the Walnut "Chorizo":

    • 3 cups cauliflower florets
    • 2 cups whole walnuts
    • 2 chipotles in adobo sauce
    • 1 tablespoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon salt
  • For the Pineapple Salsa:

    • 1 pineapple, cored and diced
    • 2 jalapeƱos, minced (remove ribs and seeds for less heat)
    • 1 bunch cilantro, chopped
    • 1/2 red onion, diced
    • 1 teaspoon salt
    • Juice of 2 limes
  • Extras:

    • Avocados
    • Limes
    • Purple cabbage
    • Tortillas

Instructions:

  1. Walnut "Chorizo":

    • Preheat your oven to 375 degrees.
    • In a food processor, pulse the cauliflower, walnuts, chipotles, chili powder, cumin, and salt until the mixture resembles ground meat.
    • Spread the mixture on a greased or parchment-lined baking sheet and bake for 30 minutes, stirring halfway through to ensure even cooking.
  2. Pineapple Salsa:

    • Simply mix all the ingredients together in a bowl. Adjust seasoning to taste.
  3. Prep Your Extras:

    • Mash the avocados with a bit of garlic powder, salt, and lime juice.
    • Toss the shredded cabbage with lime juice, olive oil, and a pinch of salt.
    • Char the tortillas over an open flame until warm and slightly crispy.
  4. Assemble the Tacos:

    • Start with a spoonful of avocado mash on a tortilla, add a generous amount of walnut chorizo, top with pineapple salsa and a handful of slaw.
    • Feel free to drizzle some chipotle mayo or a dollop of sour cream or Greek yogurt on top for extra flavor.

Cooking Tips:

  • Don’t skimp on the limes; they add a fresh burst of flavor that complements the spicy and sweet elements of the taco.

This recipe not only packs a punch in flavor but also in texture and freshness. It’s perfect for a dinner that’s both satisfying and exciting. Enjoy crafting this delightful meal that’s sure to impress!
