Sizzling Kimchi Fried Rice Delight

Kimchi Fried Rice FTW! This dish is all about comfort with a twist. Start by stir-frying some minced garlic and fresh ginger in a bit of oil until they release their fragrant aroma. Then toss in your choice of cooked rice or cauliflower rice, along with frozen peas and carrots, and a generous helping of kimchi. Splash in some soy sauce for that umami flavor and stir-fry everything until it’s hot and sizzling.

Now, for the eggs – you can scramble them right in the middle of the pan, mixing them through the rice to distribute the rich, creamy texture evenly. Or, if you prefer, fry the eggs separately and place one atop each serving for a gooey, runny yolk that adds a luxurious touch to your meal.

Finish off your fried rice with a dollop of chili paste or sriracha for some heat, a drizzle of sesame oil, and a sprinkle of sesame seeds. Add some chopped green onions or whatever else you fancy to personalize your dish.

Here’s a tip: If you’re using cauliflower rice, add it just before the eggs since it only needs a few minutes to cook. Regular rice might need a bit longer to get that perfect fried texture. And although I usually go for olive oil, any neutral oil will do. Just remember, sesame oil is best used for flavoring at the end due to its low smoke point.
