Spicy Chicken and Sweet Potato Meal Prep Magic! This simple recipe involves nothing more than chicken, sweet potatoes, broccoli, and a few choice seasonings. Spend 45 minutes with three big sheet pans, and you’ll have healthy meals ready for the entire week!

Ingredients:

  • 2 lbs. boneless skinless chicken breasts, cut into small pieces
  • 3 tablespoons spicy seasoning mix
  • Olive oil (just a few tablespoons)
  • 3 sweet potatoes, peeled and diced
  • 5-6 cups broccoli florets
  • Coarse sea salt and freshly cracked pepper
  • For serving: avocado, hummus, lemon juice, chives, olive oil

Instructions:

  1. Preheat your oven to 425 degrees.
  2. In a bowl, mix the chicken pieces with the spicy seasoning and a bit of olive oil. Stir well and let it marinate in the fridge for about 30 minutes while you prepare the other ingredients.
  3. Place the vegetables on their own sheet pans. Drizzle them with olive oil and sprinkle generously with salt.
  4. Spread the marinated chicken on a separate sheet pan.
  5. Bake everything for 12-15 minutes. Then, remove the broccoli and chicken from the oven.
  6. Give the sweet potatoes a stir and let them roast for another 15 minutes or until they’re tender and golden.
  7. Once everything is cooked, divide the chicken, sweet potatoes, and broccoli into meal prep containers.
