This Caprese Grilled Cheese is the ultimate summer sandwich! It’s packed with flavors from a homemade basil pesto and a rich garlic butter tomato sauce, all sandwiched between thick slices of sourdough bread and oozing with fresh mozzarella cheese. Here’s how you can make it:
Ingredients:
- 4 large slices of sourdough bread
- 4 thick slices of fresh mozzarella cheese
- 1/4 cup of your favorite pesto
- 2 tablespoons of salted butter
- 10 ounces of fresh cherry tomatoes
- 1 clove of garlic, minced
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
For the Garlic Butter Tomato Sauce:
- Start by heating the cherry tomatoes in a dry nonstick skillet until they begin to char slightly.
- Reduce the heat and add a tablespoon of butter, stirring well (watch for splattering).
- Gently press the tomatoes with the back of a wooden spoon to release their juices.
- Add the balsamic vinegar, minced garlic, and another tablespoon of butter. Let it simmer until the sauce thickens. Season with salt and pepper to taste.
To Assemble the Sandwich:
- Spread pesto on one slice of bread.
- Add a layer of mozzarella cheese and spoon some of the garlic butter tomato sauce over the top.
- Cover with another slice of bread. Spread butter on the outside of both bread slices.
- Repeat the process for the second sandwich.
Cooking the Sandwich:
- Heat a skillet over medium-high heat and cook the sandwich until the cheese melts and the bread is golden brown, flipping once or twice.
When you take this sandwich off the skillet, get ready for an incredibly tasty experience. This recipe makes two hearty sandwiches, perfect for sharing… or not, depending on how hungry you are! Enjoy your delicious taste of summer.
