Mango-Corn Salsa Salmon Tacos

Here’s a super simple recipe for salmon tacos that you’ll absolutely love, especially with a homemade mango, sweet corn, and cucumber salsa! It’s a delightful meal that pairs well with either black beans or creamy avocado, all wrapped up in a soft corn tortilla.

Ingredients:

  • Salmon Tacos:

    • 1 lb salmon fillet
    • 2-3 teaspoons taco seasoning
    • 2 teaspoons avocado oil
  • Mango Corn Salsa:

    • 1 large mango, diced
    • 1 cucumber, diced
    • 2 ears of sweet corn, kernels removed
    • 1/4 cup finely chopped red onion
    • 1/2 cup finely chopped cilantro
    • 1 tablespoon honey
    • Zest and juice of 1 lime
    • 1/2 teaspoon salt
  • Extras:

    • 14-ounce can of refried beans, or regular black beans, or 2 avocados
    • 8 corn tortillas
    • 1/4 cup avocado oil (for softening the tortillas)

Instructions:

  1. Prep the Oven: Start by preheating your oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Season the Salmon: In a bowl or directly on the baking sheet, coat the salmon with taco seasoning and avocado oil. If your seasoning lacks salt, add a pinch to the salmon.
  3. Bake the Salmon: Place the salmon in the oven and bake for about 8 minutes, or until it easily flakes apart with a fork.
  4. Make the Salsa: While the salmon cooks, mix all the salsa ingredients in a bowl. Adjust the seasoning as needed.
  5. Soften the Tortillas: Heat some oil in a skillet and briefly dip each tortilla in the oil, then transfer to a paper-towel-lined plate to absorb excess oil. Alternatively, wrap the tortillas in damp paper towels and microwave for 30 seconds to steam them.
  6. Assemble the Tacos: Spread mashed avocado or refried beans on each tortilla, add chunks of salmon, and top generously with salsa. Finish with a squeeze of lime and a drizzle of honey for extra flavor.

Tips:

  • Choosing Salmon: Opt for thick fillets that you can cube for even cooking and a fun texture in your tacos.
  • Cooking Salmon: Aim for medium-well doneness, where the salmon is almost fully cooked but still moist and flaky.
  • Salsa Options: The salsa is mild to suit all palates, but feel free to add jalapeƱo if you like it spicy.

This recipe is perfect for a quick, nutritious meal that brings a taste of the Caribbean to your table. Enjoy crafting these delicious salmon tacos with a tropical twist!
