    • 14-ounce can of refried beans, or regular black beans, or 2 avocados
    • 8 corn tortillas
    • 1/4 cup avocado oil (for softening the tortillas)

Instructions:

  1. Prep the Oven: Start by preheating your oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Season the Salmon: In a bowl or directly on the baking sheet, coat the salmon with taco seasoning and avocado oil. If your seasoning lacks salt, add a pinch to the salmon.
  3. Bake the Salmon: Place the salmon in the oven and bake for about 8 minutes, or until it easily flakes apart with a fork.
  4. Make the Salsa: While the salmon cooks, mix all the salsa ingredients in a bowl. Adjust the seasoning as needed.
  5. Soften the Tortillas: Heat some oil in a skillet and briefly dip each tortilla in the oil, then transfer to a paper-towel-lined plate to absorb excess oil. Alternatively, wrap the tortillas in damp paper towels and microwave for 30 seconds to steam them.
  6. Assemble the Tacos: Spread mashed avocado or refried beans on each tortilla, add chunks of salmon, and top generously with salsa. Finish with a squeeze of lime and a drizzle of honey for extra flavor.
