Here’s a super simple recipe for the best soft granola bars you’ll ever taste! These bars are packed with peanut butter, honey, vanilla, oats, pretzels, and peanuts. You can throw in any extra goodies you like to make them even more delicious.

Ingredients:

  • 2 cups rolled oats
  • 2 cups twisted pretzels, crushed to about 1 heaping cup
  • 1/2 cup salted peanut halves
  • 1 cup peanut butter (add more if needed)
  • 1/2 cup honey (add more if needed)
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, mix together the oats, crushed pretzels, and peanut halves.
  2. In a separate bowl, combine the peanut butter, honey, and vanilla until smooth.
  3. Pour the peanut butter mixture over the dry ingredients and stir until everything is well combined.
  4. Press the mixture into a 9×9 inch pan lined with parchment paper. If you use a 9×13 inch pan, the bars will be wider and flatter.
  5. Freeze the bars for 30 minutes, then remove from the pan and cut into bars.
  6. Keep the bars wrapped individually in the freezer for an easy, grab-and-go snack.

Tips:

  • Feel free to pulse half of the mixture in a food processor for a varied texture. Mix it back with the rest of the ingredients.
  • If the mixture is too dry or crumbly, add more peanut butter or honey.
  • If it’s too heavy, add more oats or pretzels.
  • Customize your bars by adding dried fruit, chocolate chips, more nuts, seeds, or anything else you fancy.

Remember, the type of peanut butter you use can affect the sweetness, saltiness, and moisture of the bars. I used Jif Creamy Natural Peanut Butter, but adjust the quantities as needed based on your choice of peanut butter. Enjoy crafting your perfect snack!
