Here’s a revamped version of a classic treat: chocolate-covered peanut butter Rice Krispie bars with a healthier twist. We’re cutting down on refined sugar by making some smart swaps. It’s a delightful combo of peanut butter and chocolate—everyone’s going to adore these!
Ingredients:
- 1 cup brown rice syrup
- 1 cup peanut butter
- 1/4 cup real maple syrup
- 6 cups brown rice Krispies
- 1 24-ounce bag of dark chocolate chips
- A generous pinch of flaked sea salt
Instructions:
For the Rice Krispie mixture:
- In a large pot, combine brown rice syrup, peanut butter, and maple syrup. Heat them until they blend into a smooth mixture.
- Add a pinch of sea salt and mix in the brown rice Krispies.
- Take the pot off the heat and press the mixture evenly into a 9×13 pan.
For the chocolate topping:
- Slowly melt the chocolate chips. You can use a double boiler, or if you’re like me, a makeshift one with a stainless steel bowl over a pot of simmering water works too. A microwave or a regular saucepan is fine as well.
- Pour the melted chocolate over the Rice Krispie base and sprinkle a bit more sea salt on top—because a little extra flavor never hurts.
- Let it sit at room temperature until the chocolate sets. Then, watch them quickly disappear!
Notes:
- I usually pick up my brown rice Krispies at Whole Foods, but regular Rice Krispies work just as well if you can’t find the brown version.
- I’ve tried substituting honey for brown rice syrup or maple syrup, but it was too sweet for my liking. Stick with the brown rice syrup for the best balance of stickiness and sweetness.
- These bars are great for taking on the go. We bring them to parties, road trips, and more during the summer.
