These tasty energy bites are reminiscent of cookie dough and come packed with nutrients! This recipe is a twist on one from the Minimalist Kitchen cookbook. I’ve tweaked it by skipping the dried fruit, opting for peanut butter over almond butter, and using chia seeds instead of hemp.
Ingredients:
- 2 cups rolled oats
- 2 cups flaked unsweetened coconut
- 1/2 cup peanut butter (add more if needed)
- 1/2 cup honey (add more if needed)
- 1/4 cup chia seeds
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions:
- Start by pulsing the oats and coconut in a food processor until they are coarsely ground.
- Add the peanut butter, honey, chia seeds, salt, vanilla, and chocolate chips to the mix. Pulse again until everything is well combined and the chocolate chips are chopped into smaller bits.
- Roll the mixture into balls. If the mixture feels too dry, just add a bit more honey or peanut butter and blend again. Adjust the quantities as needed until the mixture is sticky enough to hold together.
- Freeze the balls until they are solid. You can store them in the freezer or refrigerator.
Note:
You can make about 20-40 bites from this recipe depending on the size you prefer. Go for 20 if you like them bigger, 30 for a medium size, and 40 for smaller bites.
