Quick & Easy 5-Ingredient Peanut Butter Chocolate Chip Cookies

Here’s a super simple recipe for Peanut Butter Chocolate Chip Cookies that you’ll absolutely love. These cookies are not only easy to whip up with just five ingredients, but they’re also gluten-free and free from refined sugars. Ingredients:

  • 2 cups coconut sugar, lightly packed
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 jar (16 ounces) of creamy peanut butter (about 1 1/4 cups)
  • 1 cup chocolate chips

Instructions:

  1. Start by preheating your oven to 350°F (177°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the coconut sugar and eggs until smooth. Mix in the vanilla extract and salt.
  3. Add the peanut butter to the bowl. Keep whisking until the mixture is smooth and fully combined. You might need to switch to a big spoon to get everything nicely mixed, especially when you add the chocolate chips.
  4. Stir in the chocolate chips until they’re evenly distributed throughout the dough.
  5. For nicely shaped cookies, chill the dough for about 15 minutes before you start scooping.
  6. Use a tablespoon or a small cookie scoop to drop heaping tablespoons of the dough onto your prepared baking sheet, spacing them about 1 to 2 inches apart.
  7. If you have leftover dough after filling the baking sheet, chill it while the first batch bakes.
  8. Bake the cookies for 11 to 13 minutes. They should be golden around the edges but still a bit soft in the center.
  9. Let the cookies sit on the baking sheet for 2 minutes after removing them from the oven, then use a metal spatula to transfer them to a cooling rack.

Tips:

  • The consistency of your peanut butter can affect the cookies. If it’s quite soft, you might want to chill the dough a bit longer, maybe around 30 minutes.
  • If you prefer bigger cookies, just use a larger scoop. This will yield fewer cookies than the original recipe.
  • For a little twist, try sprinkling a bit of sea salt on top of the cookies before baking.

These cookies are perfect for keeping around the house as they stay fresh for up to 4 days at room temperature. They also freeze well for up to 3 months, so you can always have a tasty treat on hand!
