Savory Chipotle Quinoa Patties

  • 1/2 cup of uncooked quinoa

  • 1 to 2 chipotle peppers (just the peppers, not the whole can)
  • 1/2 teaspoon each of garlic powder, onion powder, chili powder, and cumin
  • 1 beaten egg
  • 1 teaspoon of salt
  • 1/4 cup of panko breadcrumbs

Instructions:

  1. Cook the Quinoa: Start by cooking the quinoa as per the instructions on the package. Let it cool off a bit after cooking.
  2. Mix: In a food processor, combine the black beans, cooked quinoa, chipotle peppers, and all the spices. Give it a few pulses. You want the mixture to be sticky and mixed but with some black bean chunks remaining for texture.
  3. Add Egg and Panko: Transfer the mixture to a bowl. Stir in the beaten egg and panko breadcrumbs. Mix well.
  4. Shape the Burgers: With your hands or a spoon, shape the mixture into four thick patties.
  5. Fry the Burgers: Heat a good amount of olive oil in a nonstick pan over medium-high heat. Fry the patties for a few minutes on each side until they’re golden brown and crispy.
  6. Serve: Enjoy your burgers on buns with toppings like spicy mayo, avocado, lettuce, tomato, and red onion (pickled onions add a great touch!).

Pro Tip: These burgers can also be made ahead and frozen. Just shape the patties, freeze them on a parchment-lined baking sheet, and once they’re solid, transfer them to a freezer bag. When you’re ready to eat, you can bake them at 350 degrees for 35 minutes or sauté as described above.
